Chocolate Chip Banana Bread

It doesn't get much better than the smell of freshly baked banana bread coming out of the oven on a cozy weekend morning.  We leveled up our traditional recipe by adding chia, flax and hemp seeds and of course dark chocolate chips as always, enhance the flavor.

Ingredients:

1/4 c full fat plain greek yogurt
4 ripe bananas + 1 unripe banana set aside
2 large eggs
1 tbsp pure vanilla 
3 tbsp maple syrup or honey
1 1/2 c whole wheat flour (or gluten free substitute)
1 c ground flax seeds
1/2 c hemp seeds
1/4 tsp salt
1/2 tsp baking soda
1 c oats
1 c dark chocolate chips
Instructions:
Preheat oven to 350.  Combine all dry ingredients and set aside. Combine bananas and yogurt in a mixing bowl, add one egg at a time, mixing well between each.  Add vanilla and maple syrup.  Slowly add in dry ingredients until batter is mixed well.  Fold in chocolate chips.  Transfer batter into a 8 x 4 loaf pan and bake for 45-50 minutes or until cooked through.  Remove and let sit for 10 minutes before transferring to cooling rack.  Once cooled, slice and spread Pumpkin Spice Cashew Butter and enjoy!
