Aimee from the test kitchen here. I am so excited to share this new recipe with you. This dressing is outta this world- you seriously have got to try it! Trust me. You’ll be cooking meals just as an excuse to use this recipe. I know because it happened to me ;)
I’ve been dying to try a grapefruit and avocado salad and knew I had to put a little Moxie spin on it. I wanted to make a creamy style dressing, so it was obvious our Cashew Butter should be the base. Avocados are delicious on their own so no matter what we did they would only get better. Grapefruits are so special because of their gorgeous pink jewel colors and their magical sweet/tart taste. We really played that up in this dressing and came up with something a little sweet, a little tangy, and perfectly creamy and smooth.

Creamy Cashew Grapefruit Dressing
Blend all of the ingredients until smooth. Allow to rest for 10 minutes while you cook your protein and assemble your salad.
For the Salad:
Lay down your favorite greens (I used Romaine and some home grown sprouts).
Add a supremed ruby red grapefruit, save the fleshy peels and middle part.
Layer in sliced avocado.
Use the protein of your choice or leave it vegetarian. I used pan seared shrimp- the color!!
Dress the salad liberally and garnish with fresh cracked pepper.
The dressing is so good, I was dipping extra shrimp right into the blender jar!
The recipe makes about 2-4 servings depending on how librally you dress your salad.
Spring is upon us and that means salads become more and more frequent in my household. I have my go-to dressing, but it’s nice to have a few that are easy to make and play into different flavors. This is an easy one and sure to impress at your next potluck or family dinner.
