Healthy Gingerbread Granola

Looking for a granola recipe that is full of healthy fats and omegas?  We love making this recipe first thing in the morning and enjoying the lingering smell of holiday spices all day long.

Fill a small mason jar full of granola and add some fun ribbon for a easy, inexpensive holiday gift.


3 cups old fashion oats
1/4 tsp sea salt
2 tbsp chia seeds
2 tbsp ground flax seeds
2 tbsp hemp seeds
1 tsp cinnamon
1 tsp nutmeg
1/3 c honey
1/4 c melted coconut oil
2 tsp pure vanilla


Preheat oven to 325F.  Line a baking sheet with parchment paper.  Mix together oats, salt, chia, flax and hemp seeds, cinnamon and nutmeg and set aside.  In a separate bowl, mix together Gingerbread Cashew Butter, honey, vanilla and coconut oil.  Slowly add in dry ingredients while mixing.  Once all ingredients are mixed together well, spread onto the lined baking sheet and press into a flat layer.  Bake for 20 - 22 minutes or until golden brown.  Do not stire during the baking process.  Remove from oven and let completely cool before breaking apart, (this gives you the big granola chunks).  

Store in an airtight container at room temperature.  Top you bowl of oats, yogurt, smoothie or even toast with this delicious holiday recipe.
