No Bake Gingerbread Fudge

This healthy take on fudge is so good you don't even realize it's healthy!  Surpirse your holiday guests with this tasty treat, or make for yourself and have a few squares when you need an afternoon pick me up.  The chocolate chips and maple syrup are optional, but we highly recommend the chocolate chips, because it's chocolate!


1/2 cup coconut oil
1 tsp pure vanilla
1/4 tsp sea salt
2 tbsp maple syrup (optional)
1/3 cup dark chocolate chips (optional)
Melt coconut oil in a small pot on the stove.  Stir in Gingerbread Cashew Butter, vanilla, sea salt and maple syrup.  Stir all ingredients until smooth.
Line an 8x8 baking sheet with parchment paper and pour mixture in.  Spread until top is smooth.  Place in the freezer for 2-3 minutes or until the mixture is more firm.  Remove and sprinkle chocolate chips evenly throughout the mixture.  Place back in the freezer for about an hour or until set.
Using a sharp knife, cut into 1 inch squares.  Store in a freezer safe zip lock or tupperware for up to a month.  If sharing with friends, the fudge will last about 30 minutes at room temperature.
