Oatmeal Raisin Pumpkin Spice Muffins

These will leave your house smelling like fall.  Try these tasy muffins, creating by our amazing ambassador, Stephanie!

Ingredients:

1 cup mashed banana

1/2 cup Pumpkin Spice Cashew Butter

2 eggs

2 tbsp honey

2/3 cup unsweetened almond milk 

1 tsp vanilla extract

2 cups oats 

1/2 tsp cinnamon 

1/4 tsp salt

1 tsp baking powder

1/3 cup raisins + 2 tbsp for topping

Optional: 1/3 cup walnuts

Instructions:

Preheat oven to 350 degrees. Line a 12 cup muffin pan with muffin liners and spray with nonstick cooking spray to prevent oatmeal cups from sticking.

In a medium bowl, mix together the mashed banana, pumpkin spice cashew butter, eggs, honey, almond milk and vanilla until smooth and well combined.

Next stir in dry ingredients: oats, baking powder, cinnamon and salt; stir well to combine. Fold in ⅓ cup raisins and walnuts into batter.

Evenly distribute oatmeal batter between muffin liners, sprinkle with remaining raisins.  Bake for 20-25 minutes.
